I know that breakfast is the most important meal of the day, but I don’t really like to eat a lot at breakfast time. Not only so, but as a vegetarian, I have a hard time finding breakfast foods that I can eat. Most breakfasts aren’t healthy and while they may taste good, they don’t make you feel good (ever get super tired after eating bacon/eggs/pancakes?). So, I decided to find some breakfast ideas that are healthy, easy, and delicious! If I wouldn’t eat/drink them, I definitely won’t recommend them.
1. Toasted Coconut Coffee Smoothie
I really love to drink my breakfast because I just don’t like to take the time to eat anything in the mornings. And if you love coffee like I do, you’ll love this toasted coconut coffee smoothie! You only need six ingredients: flaked coconut, coconut milk, coffee (frozen into ice cubes), one banana, ground flaxseed (purchased easily here), and finally vanilla extract. 2. 5-Minute Multigrain Cereal
My husband loves cereal in the morning but he only wants healthy cereal. Now, this cereal is more like oatmeal, but you can serve it with milk so, I guess that makes it cereal. Anyway, you only need seven ingredients and you just pop them all in a bowl and microwave it. Barley (you can buy that here), bulgur (a type of wheat that you can buy here), old-fashioned oats, water, raisins, ground cinnamon, and chopped walnuts or pecans. 3. Peach And Toasted Almond Greek Yogurt
This super easy breakfast dessert is definitely tempting enough to get me to eat it in the morning! It only requires four ingredients: sliced almonds, a peach, Greek yogurt, and brown sugar. To see how easy it is to make, click here to get the whole recipe (one paragraph long).
4. 5-Minute Microwave Apple Cinnamon Crumble for One
I’m rather surprised that this claims to only take 5 minutes (including prep time) as there is quite the list of ingredients. Still, it seems relatively easy to make and looks absolutely delicious especially for these cold winter months. If you want the recipe head over here.
5. Peach Melba Sunrise Smoothie
Another delicious smoothie if you prefer fruit flavors instead of coffee and coconut. I absolutely love the colors! It truly does look like a sunrise! There are only seven ingredients and it takes about 10 minutes total to prepare and make it. All you need are frozen raspberries, almond milk, vanilla extract, lemon juice, maple syrup, one peach, and orange juice. Click here for the full recipe!
6. Clif Bar (White Chocolate Macadamia Nut)
I love to eat Clif bars in the morning. They’re quick and easy to eat with no preparation and they keep me satisfied for several hours. The flavor I’m advertising here is my absolute favorite because it doesn’t have that bitterness that I find in regular chocolate and the macadamia nut is delicious! 7. Honey Lime Quinoa Fruit Salad
One of my favorite things to eat in the morning is fruit. But I get tired of eating the same thing (apples) every morning (when I don’t have a smoothie). This fruit salad has amazing flavors and is really easy to make. The only problem is it can get expensive to buy these fruits fresh when they’re not in season. However, you can always look in the frozen section and see if they have some of these fruits frozen. 8. Double Berry Breakfast Parfait
I love parfaits (much like Donkey from “Shrek”) and this one is super easy to make, not to mention I usually see strawberries and blueberries on sale in my grocery store so it wouldn’t be expensive to make. 9. Piña Colada Smoothie Bowl
If you love Piña Coladas or just tropical flavors in general, you’ll enjoy this smoothie bowl. It is really easy to make with only five ingredients (pineapple, banana, coconut milk, shredded coconut and maraschino cherries) and super fast. 10. Guacamole Toast
I can’t make this for my husband because he hates guacamole, but I absolutely love it and would make it just for myself! If you want to spice up your breakfast you’ll definitely want to check this out. It’s quick and easy to make and absolutely delicious.
